They might do this if, for example, they thought this change will make the product more appealing to their customers, and/or because they think it better describes the properties of the mattress relative to other products they carry. Based on the information you provided, it sounds like the retailer is using "Plush Firm" as an alternative to "Medium" in this case. However, without being able to see and feel the specific product in question and the context of how it's shown by the retailer, I'm afraid I can't be 100% certain on this.
